Yummy Baked Zucchini

Yum so its that time of year when all of the zucchini is on and in abundance! As I mentioned before my dad just recently had a birthday and we love to make a big reason to cook so our bday dinners are over the top. We had everything a thanksgiving meal would have...with a few summery additions. Fresh Zucchini being one of them. And it was so so good! Oh and way easy!



Breaded Zucchini Fries

Equal parts of Seasoned Breadcrumbs & Parmesan Cheese (I used about 1/2 cup each) it depends on how much you are doing)
1/4 tsp onion powder
1/3 tsp garlic salt
salt and pepper to taste
buttermilk
zucchini

Mix all dry ingredients together. Cut zucchini into spears or disks, dip in buttermilk, and coat with breading. Be sure to really pat everything on really good so it coats well.

Place on lined cookie sheet and cook at 375 for approximately 30 minutes.
